Cabbage Beef Casserole

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 10
  • 1 head cabbage (about 3 pounds)
  • 1 1/2 lbs ground beef
  • 1/2 lb ground lamb
  • 1/2 cup onion, chopped
  • 1/2 cup rice (instant)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (10 1/2 ounce) can tomato soup
  • 8 ounces spicy hot v8
  • 6 ounces v8 vegetable juice
  • 6 fluid ounces water
  • 8 ounces tomato sauce
  • 1 cup sharp cheddar cheese, grated
  • 1 cup mozzarella cheese, grated

Recipe

  • 1 cut the cabbage into medium size pieces and place in the bottom of a greased 9x13 in casserole dish.
  • 2 brown the meat and onion in a large skillet, drain well, return to skillet.
  • 3 stir the rice, salt and pepper into the meat.
  • 4 spoon the meat/rice mixture over the cabbage.
  • 5 in a saucepan, heat soup, v-8 juice and water to boiling.
  • 6 pour over ingredients in casserole dish.
  • 7 sprinkle cheese over all.
  • 8 cover tightly with foil.
  • 9 bake at 350 degrees for 1 1/2 hours.
  • 10 don't peek!
