Coffee And Walnut Cupcakes

Ingredients

  • Servings: 12
  • 150 g self-raising flour
  • 60 g walnuts
  • 150 g butter, softened
  • 150 g light brown sugar
  • 3 medium eggs
  • 2 tablespoons instant coffee granules
  • 1 tablespoon boiling water
  • 1 tablespoon instant coffee granules
  • 1 tablespoon boiling water
  • 90 g butter, softened
  • 175 (6 ounce) confectioners' sugar
  • 12 walnut halves

Recipe

  • 1 preheat oven to 190°c/375°f (gas 5).
  • 2 line a 12-hole muffin tin with paper cases.
  • 3 to make the cupcakes, tip the flour and walnuts into the bowl of a food processor and process until the nuts are finely ground.
  • 4 beat the butter and sugar in a bowl until the mixture is light and fluffy, then add the eggs, and the flour and walnut mixture. tip the coffee granules into a small bowl, add the water and stir until the coffee has dissolved, then add to the cake ingredients in the bowl. beat the mixture until smooth.
  • 5 divide the mixture between the paper cases and bake in the centre of the oven for 15 to 20 minutes until the cakes have risen and are just firm to the touch in the centre. remove the cakes from the oven and transfer them to a wire rack to cool.
  • 6 to make the frosting, tip the coffee granules into a mixing bowl, add the boiling water and stir until the coffee has dissolved. add the butter to the bowl and beat until smooth, then gradually beat in the confectioner's sugar. spread the frosting over the top of the cupcakes and place a walnut half on top of each cupcake. dust with a little confectioner's sugar before serving.

  • 1 (11 ounce) can pineapple tidbits (not drained)
  • 1 cup mini marshmallows
  • 1 (8 ounce) carton small curd cottage cheese

Recipe

  • 1 mix all ingredients in the order given, and refrigerate 3-4 hours or overnight.
  • 2 stir and fluff when done, and serve chilled.

Caballero Cookies

  • 6 tablespoons unsalted butter, room temperature
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon espresso powder or 1 teaspoon finely ground coffee beans
  • 1/4 teaspoon kosher salt
  • 1 pinch cayenne pepper
  • 1/2 cup rolled oats (not instant)

  • 1 preheat oven to 350 degrees f. lightly grease two baking sheets, or line them with parchment paper.
  • 2 cream together the butter, granulated sugar, and brown sugar until smooth. add the egg and vanilla and beat until creamy.
  • 3 whisk together the flour, baking powder, soda, cinnamon, ground coffee, salt and cayenne. add the dry mixture to the liquid mixture. stir until well combined. stir in the oats, both chocolates, and the pecans.
  • 4 working in batches, form the dough into walnut-size balls (if the dough is too soft, you can place it in the refrigerator for 10 minutes), then place the dough balls 2 inches apart on the prepared baking sheets. bake, one sheet at a time, for 11 - 14 minutes, or until flattened, lightly browned and set. cool on the sheet for 5 minutes; then transfer to a wire rack to continue cooling. repeat for the remaining cookie dough.

Christina's Strawberry Trifle

  • 1 (18 ounce) package cake mix
  • 6 ounces fresh strawberries (sliced and sweetened if desired)
  • 1 (5 ounce) box instant vanilla pudding or 1 (5 ounce) box lemon pudding mix
  • 6 peaches or 6 apricots, sliced
  • 1 (16 ounce) container cool whip
  • 1/4 cup slivered almonds

Recipe

  • 1 bake cake in a 13x9 2 inch pan as directed on the package and allow to cool.
  • 2 cut the cake crosswise in half. freeze half for another time, unless doubling the recipe.
  • 3 cut the remaining half cake into 8 sections. split each section horizontally.
  • 4 arrange half of the cake sections in a 2 quart glass serving bowl. set aside a few berries for decoration and layer half of the remaining strawberries over the cake and pour one cup of pudding over the berries, cover with a cup of cool whip. repeat this layer of cake, berries,pudding and cool whip.
  • 5 finish the top by pouring a ring of pudding around the rim of the bowl. decorate by alternating apricot or peach halves and whole strawberries.
  • 6 pour cool whip topping in the centre space and sprinkle slivered almonds. chill before serving.

  • 1 cup cocoa
  • 3 cups flour
  • 1 1/2 teaspoons salt

Bean Butt Chicken

Ingredients

  • 1 chicken, about 4 pounds, washed and dried
  • 2 tablespoons chili powder
  • 1 teaspoon chili powder
  • 1 pinch salt and pepper (to taste)
  • 1 tablespoon canola oil
  • 1 (16 ounce) can baked beans

Recipe

  • 1 preparation time: approximately 15 minutes.
  • 2 cook time: approximately 90 minutes.

  • 4 preheat the grill to medium (about 350°f) over indirect heat. if you have a 3 or 4 burner grill the middle burners should be off. if you have a 2 burner grill, one side should be off. if you are using charcoal, preheat a split bed of charcoal (about 24 pieces per side) to a medium thick ash. place a drip pan between the mounds of charcoal.
  • 5 rub the chicken inside and out with 2 tablespoons chili powder, and salt and pepper, and rub the outside of the chicken with 2 teaspoons oil. remove the label from the unopened can; wash the can. open the can of beans. stir the remaining 1 teaspoon chili powder into the beans. coat the outside of the can with oil. put the can on a plate or sturdy sheet pan.
  • 6 lower the chicken onto the can, inserting the can into the internal cavity of the bird. position the chicken so that the front legs and the can form a tripod holding the chicken upright. put the chicken and can on the grill away from the heat, cover the grill (without touching the chicken to the grill top) and cook until an instant-read thermometer inserted into the thickest part of a thigh registers about 170°f, about 1 1/2 hours. if your grill has an external temperature gauge, it should stay around 350°f if you are using charcoal, you will probably have to replenish the coals after the first hour.

Coffee Bavarian Cream

Ingredients

  • 1/4 cup water
  • 1/4 ounce unflavored gelatin, plus
  • 1 teaspoon unflavored gelatin (1 envelope plus 1 tsp.)
  • 1 1/2 cups whole milk
  • 1 tablespoon instant coffee granules
  • 5 large egg yolks
  • 7 tablespoons sugar
  • 1 cup heavy cream

Recipe

  • 1 pour the water into a small bowl and sprinkle the gelatin over it. let stand until ready for use.
  • 2 pour the milk into a small saucepan and whisk in the coffee granules. place the saucepan over medium-high heat and bring the milk just to the boil, whisking to dissolve the coffee.
  • 3 put the egg yolks into a bowl and whisk just to blend them. add the sugar and continue to whisk.
  • 4 gradually whisk the hot milk into the egg yolks. note: when you whisk in the hot milk, be sure to do it very slowly, or you will have scrambled eggs. pour the mixture back into the saucepan and place over medium low heat.
  • 5 cook, stirring constantly and scraping the bottom of the pan, until mixture thickens and reaches 165°-170°f on an instant-read thermometer. if you don't have a thermometer, dip a metal spoon in the sauce and run your finger down the middle of the the back of the spoon. it should leave a clear trail.
  • 6 remove from heat and whisk in the gelatin until it is completely dissolved.
  • 7 pour the mixture into a large bowl and allow to cool to room temperature.
  • 8 place the bowl in the refrigerator and stir about every 5 minutes. after 20 minutes remove the mixture.
  • 9 whip the cream until soft peaks form. gently fold the cream into the custard.
  • 10 lightly oil a 4-5 cup mold. pour the custard into the mold and refrigerate, until set, at least every 2 hours.

Bountiful Hot Fudge Sundae Pie

  • 1 in a small bowl, stir together the yeast, 1 teaspoon sugar and one-fourth cup warm water. set aside until the yeast begins to foam, 5 to 10 minutes.
  • 2 in a medium bowl, whisk together the 2 eggs, oil, rosewater or orange flower water, vanilla, remaining three-fourths cup warm water and salt.

  • 1 beat milk and pudding mix with a wire whisk for 2 minutes.
  • 2 refrigerate for 2 hours.
  • 3 mix in 1/2 cup of the cool whip and mix with spoon for one minute or until you cannot see anymore and the chocolate has turned a lighter brown.

  • 1 teaspoon instant coffee
  • 2 tablespoons water
  • 2 tablespoons sugar
  • 3/4 cup evaporated milk
  • 2 (2 5/8 ounce) envelopes dream whip
  • 1 cup milk (chilled)
  • 3/4 cup single cream (chilled)
  • 1 teaspoon vanilla
  • 1 cup water
  • 1 teaspoon instant coffee
  • nut crunch topping
  • 3/4 cup almonds
  • 1 cup sugar

Recipe

  • 1 make dream whip mix as directed on the box with one cup of chilled milk.and put it in the fridge to chill.
  • 2 mix 1 teaspoon instant coffee with 2 tab spoon sugar and 2 tab spoon hot water.
  • 3 now put this coffee mixture into dream whipped cream, single cream, evaporated milk and vanilla, and mix all togather with whisk.put it back in the fridge to chill.
  • 4 in one wide mouth cup or bowl, put 1 cup of water with one teaspoon of instant coffee and mix it very well.(later we will dip biscuits in it).

  • 7 after biscuits layer put some dream whip cream mixture on to biscuits to cover them and level the cream mixture with spatula. it’s the 2nd layer, now 3rd layer again with biscuits (dipped in coffee mixture) then 4th layer with cream mixture. so in same manner finish biscuits and cream mixture, the last layer should be the cream mixture(on the top). put the dish in the fridge, for 2 to 3 hours.
  • 8 now make almond crunch for topping. in a pan melt sugar on slow flame. when it starts melting and turning brown add almonds. when it turns like honey brown, remove at once from heat and pour it in buttered dish or pan.(be careful its very hot)
  • 9 grind or crush the crunch when its cold. and sprinkle it on the coffee cake.you can decorate it with fresh whipping cream as you like.

  • 8 egg yolks
  • 1 1/4 cups sugar
  • 2 cups heavy cream
  • 1/2 cup very strong coffee
  • 1/4 cup powdered instant coffee (or more if desired)

Recipe

  • 1 cream egg yolks with 1 cup sugar until very light and smooth and creamy.
  • 2 in a large bowl, whip cream with remaining 1/4 cup sugar until soft peaks form.
  • 3 place the bowl in ice.
  • 4 slowly add the coffee and powdered coffee to the cream, beating constantly.
  • 5 slowly add the egg yolk mixture to the cream mixture, beating constantly.
  • 6 when all of the ingredients have been thoroughly blended and mixture is stiff, pour into mold (filling only 3/4 full to allow for expansion).
  • 7 cover with wax paper, adjust the lid so it fits tightly, and either grease the edges or seal with adhesive tape to prevent salt from penetrating the seal.
  • 8 place in a bucket packed with ice and rock salt (1 part salt to every 4 parts ice; ice should be cracked fine) and allow 3-4 hours for freezing.
  • 9 when bombe is done, remove mold and wipe carefully before opening to avoid getting salt inside.
  • 10 store leftovers in freezer.

  • 2 tablespoons honey
  • 2 cups toasted rice cereal
  • 2 cups milk (skim or low fat)

  • 1 coat a pie plate with nonstick spray.
  • 2 in a saucepan, warm the peanut butter and honey over low heat until the peanut butter has melted.
  • 3 remove the pan from the heat and stir in the cereal.
  • 4 press the cereal mixture into the bottom and up the side of the pie plate.
  • 5 freeze for 1 hour.
  • 6 prepare the instant pudding according to the package directions.

  • 1 cup water
  • 2 cups chopped pecans
  • 1 cup packed brown sugar
  • 2 tablespoons cinnamon
  • 1/4 cup sugar

Recipe

  • 1 grease a 9 x 13 pan and preheat oven to 350°.
  • 2 in a large bowl mix cake mix, eggs, instant butterscotch pudding, instant vanilla pudding, vegetable oil and water.
  • 3 in a separate bowl mix chopped pecans, brown sugar, cinnamon and sugar.

  • 1 tablespoon all-purpose flour

  • 1 cup brown sugar, lightly packed
  • 1/4 teaspoon baking soda

  • 1 preheat oven to 350 degrees.
  • 2 in large bowl combine apples, sugar, flour, cinnamon, and vanilla.

Ingredients

  • 1 (18 ounce) box yellow cake mix, box
  • 1 (3 ounce) package vanilla instant pudding mix
  • 4 eggs
  • 1/2 cup cold water
  • 1/2 cup canola oil
  • 1/2 cup dark rum or 1/2 cup light rum, is fine
  • 1 cup pecans, chopped
  • brown sugar (optional)
  • 3/4 cup butter
  • 1/4 cup water
  • 1 1/2 cups sugar
  • 3/4 cup rum

Recipe

  • 1 preheat oven to 325.
  • 2 grease and flour bundt cake pan.
  • 3 sprinkle nuts over bottom of pan.
  • 4 if desired, sprinkle a couple of tablespoons of brown sugar over the nuts.
  • 5 mix all cake ingredients together.
  • 6 pour batter over nuts.
  • 7 smooth out ’til the top is even.
  • 8 bake 1 hour, or a little less if the pan is black. do not overbake!
  • 9 while cake has ten minutes to go, make the glaze.
  • 10 melt butter in saucepan.
  • 11 stir in water and sugar.
  • 12 boil 4 to 5 minutes, stirring constantly.
  • 13 turn off flame and pour in rum.
  • 14 stir to combine and reheat for 30 seconds.
  • 15 remove cake from oven.
  • 16 immediately drizzle 1/3 of the glaze on the bottom (top) of the cake.

  • 6 cover with a dish cloth and set in a warm place to rise for 15 min or until double in size.

  • 9 place 1/2 cup flour on your clean dry kneading surface.
  • 10 turn dough onto surface and knead until most of the flour is worked in, or to a nice smooth consistency, 3-8 minutes.

  • 13 allow to rise, covered, for 20 min or until doubled in size.

Ingredients

  • 2 cups unsweetened instant tea (lemon)
  • 1 3/4 cups tang orange crystals
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon clove

Recipe

  • 1 mix ingredients and add to a favorite mug of hot water. i prefer 2 teaspoonsful per mug, but i recommend adding to favor your own taste preferences.
