Easy Lemon Pudding Cookies

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 cup bisquick baking mix
  • 1 package jell-o lemon instant sugar-free pudding
  • 1/2 teaspoon ground ginger
  • 1 egg, lightly beatten
  • 1/4 cup vegetable oil
  • 1/2 cup sugar
  • 3 chocolate baking squares

Recipe

  • 1 preheat oven to 350°f
  • 2 stir baking mix, pudding mix, and ginger together in a medium bowl. mix in egg and oil until well blended.
  • 3 roll cookie dough into 1-inch balls. place balls 2 inches apart on a lightly greased cookie sheet.
  • 4 dip flat-bottom glass into sugar. press glass onto each cookie dough ball and flatten into 1/4 inch thickness.
  • 5 bake 10 minutes. immediately remove from cookie sheet. cool on wire racks.
  • 6 drizzle cookies with melted chocolate.
