Easy Lemon Pudding Cookies

Ingredients
- 1 cup bisquick baking mix
- 1 package jell-o lemon instant sugar-free pudding
- 1/2 teaspoon ground ginger
- 1 egg, lightly beatten
- 1/4 cup vegetable oil
- 1/2 cup sugar
- 3 chocolate baking squares
Recipe
- 1 preheat oven to 350°f
- 2 stir baking mix, pudding mix, and ginger together in a medium bowl. mix in egg and oil until well blended.
- 3 roll cookie dough into 1-inch balls. place balls 2 inches apart on a lightly greased cookie sheet.
- 4 dip flat-bottom glass into sugar. press glass onto each cookie dough ball and flatten into 1/4 inch thickness.
- 5 bake 10 minutes. immediately remove from cookie sheet. cool on wire racks.
- 6 drizzle cookies with melted chocolate.
