Brown Rice Pilaf

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • Servings: 4
  • 1/4 cup chopped green onion
  • 2 teaspoons butter
  • 1 1/3 cups instant brown rice
  • 1/3 cup chopped walnuts
  • 1 1/3 cups water
  • 1/3 cup dried apricot, thinly sliced
  • 1/4 teaspoon salt (to taste)
  • 1/8 teaspoon pepper (to taste)

Recipe

  • 1 in a small saucepan, saute green onions in butter until tender.
  • 2 add in rice and walnuts; cook and stir for 1-2 minutes or until walnuts are toasted.
  • 3 add in water, apricots, salt, and pepper.
  • 4 bring to a boil; decrease heat; cover and simmer for 5 minutes or until liquid is absorbed.
  • 5 let stand for 5 minutes; fluff with a fork.
  • 6 adjust seasoning to taste with salt and pepper.
