Blueberry Oatmeal Squares

Total Time: 1 hr 10 mins Preparation Time: 25 mins Cook Time: 45 mins

Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 1/2 cups rolled oats (not instant)
  • 1 tablespoon grated orange rind
  • 1 cup brown sugar
  • 1/4 teaspoon salt
  • 1 cup cold butter, cubed
  • 3 cups fresh blueberries, this is the filling
  • 1/2 cup sugar
  • 1/3 cup orange juice
  • 4 teaspoons cornstarch

Recipe

  • 1 filling: in saucepan bring blueberries, sugar and orange juice to boil; reduce the heat and simmer until tender, about 10 minutes.
  • 2 whisk cornstarch with 2 tbsp water and whisk into blueberries and boil, stirring until thickened, about 1 minute.
  • 3 place plastic wrap on the surface of berries and refrigerate until cooled, about 1 hour.
  • 4 in large bowl whisk together oats, flour, orange rind and salt.
  • 5 with pastry blender cut in cold butter until you have coarse crumbs.
  • 6 press 1/2 of mixture into a 8 inch square parchment lined metal cake pan.
  • 7 spread with blueberry filling.
  • 8 sprinkle with the rest of oat mixture and press lightly.
  • 9 bake in centre of a 350 degree oven until lightly brown, about 45 minutes. let cool and cut into squares.
  • 10 enjoy.
  • 11 time does not include the 1 hour of cooling the blueberry filling.
