Espresso Chip Muffins

Ingredients
- 2 cups unbleached all-purpose flour
- 1/4 cup instant espresso coffee powder
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1 cup milk
- 3/4 cup packed light brown sugar
- 1/2 cup unsalted butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
Recipe
- 1 grease muffin cups with non-stick cooking spray or butter.
- 2 in a large mixing bowl, add the flour, espresso coffee powder, baking powder, cinnamon, and salt; stir to combine.
- 3 in another bowl, add the milk, brown sugar, melted butter, eggs, and vanilla; whisk until smooth.
- 4 add the liquid ingredients to the dry ingredients; stir just until moistened; do not overmix.
- 5 pour batter evenly into muffin cups.
- 6 sprinkle chocolate chips over each muffin.
- 7 bake at 400 degrees for 20-22 minutes or until pick comes out clean.
- 8 cool on a wire rack before removing from the pan.
