A Bit Of Everything Banana Bread

Total Time: 1 hr 30 mins Preparation Time: 20 mins Cook Time: 1 hr 10 mins

Ingredients

  • 1 3/4 cups sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 pinch ground cloves
  • 1 teaspoon instant coffee (rub between fingers to break down)
  • 1 3/4 cups flour (i use whole wheat, which results in an even denser bread)
  • 1/4 cup rolled oats
  • 1/4 cup cornmeal
  • 1/2 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla
  • 1 1/2 teaspoons baking soda
  • 1/4 cup low-fat yogurt or 1/4 cup low-fat buttermilk
  • 1/2 cup semi-sweet chocolate chips
  • 5 very ripe bananas

Recipe

  • 1 preheat oven to 350°f spray 2 loaf pans or 1 bunt pan.
  • 2 in a large bowl, mash bananas with a masher or well-washed hands.
  • 3 add all the ingredients except flour and chocolate chips.
  • 4 add the flour and mixed just until combined.
  • 5 pour half of the batter into the pan(s). sprinkle chocolate chips evenly across the top and then add the remaining batter to the pan(s).
  • 6 bake for 50-70 minutes, until a toothpick comes out almost clean but still collecting a few crumbs. let cool 15 minutes after removing from oven and then remove from pan(s).
