Brownie Cheesecake

Total Time: 1 hr 40 mins Preparation Time: 30 mins Cook Time: 1 hr 10 mins

Ingredients

  • 15 1/8 ounces low-fat fudge brownie mix
  • 2 teaspoons instant coffee granules
  • 1/2 teaspoon cinnamon
  • 4 ounces carrot baby food, no kidding
  • 1/2 cup sugar
  • 2 tablespoons sugar
  • 4 teaspoons flour
  • 1 teaspoon vanilla extract
  • 500 g light cream cheese, blocks
  • 2 egg whites, large
  • 3 tablespoons 1% low-fat milk, divided
  • 2 tablespoons cocoa powder

Recipe

  • 1 heat oven to 425°f.
  • 2 combine first 4 ingredients. press mix up against bottom and sides of 9 inch springform coated with cooking spray.
  • 3 beat 1/2 cup sugar, flour, vanilla and cream cheese.
  • 4 add egg whites and 2 tbsp milk, beat well.
  • 5 cocoa mix - combine 1/2 cup of cream cheese batter with 1 tbsp milk, 2 tbsp sugar and cocoa.
  • 6 spoon remaining cream cheese batter and cream cheese cocoa batter alternately into pan; swirl together using a knife.
  • 7 bake at 425f for 10 min, reduce heat to 275f and bake another 60 min or until set.
