Cheesy Beans & Rice

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 16 ounces velveeta reduced fat cheese product, cubed
  • 1 (14 ounce) can diced tomatoes (rotel)
  • 1 (14 ounce) can black beans
  • 4 cups instant rice
  • 6 tortillas
  • sour cream (to taste)

Recipe

  • 1 gather up all ingredients, a knife, a can opener, measuring cups, a crock pot, and a spoon.
  • 2 turn crock pot on high.
  • 3 cube velveeta.
  • 4 add all ingredients except tortillas to crock pot.
  • 5 simmer until cheese is melted, stirring regularly.
  • 6 warm tortillas.
  • 7 add sour cream if desired and spoon into tortillas.
