Coconut Chip Cookies

Ingredients
- 1 cup margarine, softened
- 3/4 cup brown sugar, packed
- 1/4 cup sugar
- 1 (4 ounce) package coconut cream pudding mix, instant
- 2 large eggs
- 1 teaspoon vanilla (or coconut extract)
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1 (12 ounce) package vanilla chips, morsels
- 1 cup coconut
Recipe
- 1 combine margarine and sugars, beat on medium speed until creamy.
- 2 add pudding mix, beat to combine.
- 3 add eggs and vanilla; combine.
- 4 in a separate bowl, combine flour and baking soda.
- 5 gradually add flour mixture to creamed mixture; mix well.
- 6 stir in morsels and coconut.
- 7 drop batter by rounded tablespoon onto parchment paper lined baking sheets.
- 8 bake at 375 degrees for 8 to 10 minutes. they will be lightly browned.
- 9 let cool on baking sheet for 2 minutes before removing.
- 10 transfer to wire rack and let cool completely.
