Ingredients
- 1 lb carrot, sliced into 1/2-inch coins
- 5 stalks celery, chopped 1/2-inch thick
- 1 large onion, chopped
- 5 lbs chicken
- 2 tablespoons chopped parsley
- salt, to taste
- pepper, to taste
Recipe
- 1 in a large pot, place carrots, celery, onion, and chicken (backbone-side up). add water to cover.
- 2 bring to a boil, then reduce to a simmer, and cook partially covered until chicken is done, about one hour. skim off foam and discard.
- 3 remove chicken from pot and allow to cool. remove meat from bones and shred into bite-sized pieces. add chicken pieces back into the pot. cook until heated through. season with salt and pepper and garnish with parsley.
