Easy Mexican Rice

Ingredients
- Servings: 4
- 1 cup uncooked rice (not instant)
- 1 onion, diced
- 1 -2 garlic clove, minced
- 1 3/4 cups chicken broth
- 1/2 cup salsa
- 2 tablespoons oil
Recipe
- 1 saute onons and garlic in saucepan in hot oil until softened.
- 2 add rice and saute 2 -3 minutes, or until it begins to turn .
- 3 add broth and salsa.
- 4 bring to a full boil; cover and reduce to simmer.
- 5 simmer 25 minutes & turn off heat.
- 6 let rice sit for 5 minutes. fluff with fork and serve.
- 7 optional: stir in a small can of well drained corn, mixed vegetables or sliced green onion.
