Easy Mexican Rice

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 cup uncooked rice (not instant)
  • 1 onion, diced
  • 1 -2 garlic clove, minced
  • 1 3/4 cups chicken broth
  • 1/2 cup salsa
  • 2 tablespoons oil

Recipe

  • 1 saute onons and garlic in saucepan in hot oil until softened.
  • 2 add rice and saute 2 -3 minutes, or until it begins to turn .
  • 3 add broth and salsa.
  • 4 bring to a full boil; cover and reduce to simmer.
  • 5 simmer 25 minutes & turn off heat.
  • 6 let rice sit for 5 minutes. fluff with fork and serve.
  • 7 optional: stir in a small can of well drained corn, mixed vegetables or sliced green onion.
