Cheesy Beef And Tomato Bake

Ingredients

- 1 lb ground beef
- 1 ounce dry onion soup mix
- 2 medium tomatoes, chopped
- 1 1/2 cups uncooked instant rice
- 1 1/2 cups water
- 1 medium tomato, sliced
- 4 ounces colby-monterey jack cheese, shredded
Recipe
- 1 heat oven to 400.
- 2 spray 8-inch square baking dish with nonstick cooking spray.
- 3 cook ground beef in large skillet over medium high heat until thoroughly cooked, stirring frequently.
- 4 drain.
- 5 stir in soup mix, chopped tomatoes, rice and water.
- 6 bring to a boil.
- 7 pour into sprayed baking dish.
- 8 cover tightly with foil.
- 9 bake at 400 for 20 to 25 minutes or until liquid is absorbed and rice is tender.
- 10 uncover; top with tomato slices; sprinkle with cheese.
- 11 bake uncovered an additional 10 minutes or until cheese is melted.
