Cheesy Beef And Tomato Bake

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 lb ground beef
  • 1 ounce dry onion soup mix
  • 2 medium tomatoes, chopped
  • 1 1/2 cups uncooked instant rice
  • 1 1/2 cups water
  • 1 medium tomato, sliced
  • 4 ounces colby-monterey jack cheese, shredded

Recipe

  • 1 heat oven to 400.
  • 2 spray 8-inch square baking dish with nonstick cooking spray.
  • 3 cook ground beef in large skillet over medium high heat until thoroughly cooked, stirring frequently.
  • 4 drain.
  • 5 stir in soup mix, chopped tomatoes, rice and water.
  • 6 bring to a boil.
  • 7 pour into sprayed baking dish.
  • 8 cover tightly with foil.
  • 9 bake at 400 for 20 to 25 minutes or until liquid is absorbed and rice is tender.
  • 10 uncover; top with tomato slices; sprinkle with cheese.
  • 11 bake uncovered an additional 10 minutes or until cheese is melted.
