Frosted Raisin Squares

Ingredients
- 1 cup raisins
- 2/3 cup boiling water
- 1 teaspoon instant coffee
- 1 teaspoon cinnamon
- 1/2 cup butter
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup milk
- 1/2 cup butter
- 2 cups icing sugar
- 2 tablespoons milk (or enough to make icing of spreading consistency)
- 1 teaspoon vanilla
- 1/2 cup chopped walnuts (or more, if you desire)
Recipe
- 1 pour boiling water over raisins.
- 2 sprinkle with instant coffee and cinnamon.
- 3 let cool.
- 4 meanwhile, mix all batter ingredients together.
- 5 pour liquid off raisins and add liquid to batter.
- 6 mix well.
- 7 add raisins to batter.
- 8 pour mixture into jelly roll pan and bake for 20 minutes at 320 degrees f.
- 9 let cool.
- 10 meanwhile, make icing: cream butter.
- 11 add icing sugar.
- 12 add milk, a little at a time, and blend well.
- 13 blend in vanilla.
- 14 when cake is cool, frost with icing.
- 15 sprinkle with chopped walnuts.
- 16 cut into squares.
