Frosted Raisin Squares

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 cup raisins
  • 2/3 cup boiling water
  • 1 teaspoon instant coffee
  • 1 teaspoon cinnamon
  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup milk
  • 1/2 cup butter
  • 2 cups icing sugar
  • 2 tablespoons milk (or enough to make icing of spreading consistency)
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts (or more, if you desire)

Recipe

  • 1 pour boiling water over raisins.
  • 2 sprinkle with instant coffee and cinnamon.
  • 3 let cool.
  • 4 meanwhile, mix all batter ingredients together.
  • 5 pour liquid off raisins and add liquid to batter.
  • 6 mix well.
  • 7 add raisins to batter.
  • 8 pour mixture into jelly roll pan and bake for 20 minutes at 320 degrees f.
  • 9 let cool.
  • 10 meanwhile, make icing: cream butter.
  • 11 add icing sugar.
  • 12 add milk, a little at a time, and blend well.
  • 13 blend in vanilla.
  • 14 when cake is cool, frost with icing.
  • 15 sprinkle with chopped walnuts.
  • 16 cut into squares.
