Garlic Potato Clam Chowder

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 1 cup shredded carrot
  • 2 cups chicken broth
  • pepper
  • 2 (6 1/2-9 3/4 ounce) cans chopped clams, undrained
  • 3 ounces packages garlic instant mashed potatoes (i use trader joe's brand)
  • 2 cups milk

Recipe

  • 1 heat olive oil over medium heat in large saucepan.
  • 2 add chopped onion and shredded carrots and saute until onion is translucent, about 5 minutes.
  • 3 add chicken broth and pepper and bring to a boil.
  • 4 stir in clams, potato flakes, potato seasoning packet, and milk.
  • 5 cook, stirring or whisking constantly, until thoroughly heated and smooth.
  • 6 do not allow to boil.
  • 7 add addtional milk for a thinner consistency.
  • 8 garnish with dill weed and shredded cheese if desired.
