Golden Potato Rolls

Total Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 tablespoon instant yeast
  • 1/2 cup water
  • 1 cup milk
  • 3/4 cup shortening or 3/4 cup margarine
  • 1 1/4 cups leftover mashed potatoes
  • 1/3 cup sugar
  • 2 1/2 teaspoons salt
  • 8 -8 1/2 cups flour
  • 2 eggs, beaten

Recipe

  • 1 heat milk, water, shortening and potatoes just until shortening is melted.
  • 2 remove from heat and place in large bowl with sugar and salt.
  • 3 add 2 cups flour mixed with yeast.
  • 4 add eggs and mix well.
  • 5 stir in enough of remainging flour to make dough smooth and elastic - about 6 minutes.
  • 6 place in a greased bowl, turning once to grease top.
  • 7 cover and let rise in warm place until doubled, about 1 hour.
  • 8 punch down and divide into thirds.
  • 9 on a floured surface, roll eacfh portion into a 12 inch circle.
  • 10 cut each circle into 12 pie shaped wedges - beginning at wide end, roll up each wedge.
  • 11 place rolls, point side down and two inches apart on greased baking sheets.
  • 12 cover and let rise 30 minutes or until nearly doubled.
  • 13 bake at 400f for 15 minutes.
