Bohemian Black Bread (bread Machine)

Total Time: 3 hrs 20 mins Preparation Time: 20 mins Cook Time: 3 hrs

Ingredients

  • 1 1/8 cups water
  • 3 tablespoons butter, melted
  • 1 1/2 tablespoons molasses
  • 1 3/4 cups bread flour
  • 1 cup medium rye flour or 1 cup dark rye flour
  • 1/4 cup wheat bran
  • 2 tablespoons unsweetened dutch process cocoa
  • 1 tablespoon gluten
  • 1 1/2 teaspoons instant espresso powder
  • 1 1/2 teaspoons caraway seeds
  • 1/2 teaspoon fennel seed
  • 1 1/2 teaspoons salt
  • 2 teaspoons fast rising yeast (or 2 1/2 t. bread machine yeast)

Recipe

  • 1 add all ingredients to the pan according to the order in the manufacturer's directions.
  • 2 set crust on medium and program for the basic or whole wheat cycle; press start.
  • 3 when the baking cycle ends, immediately remove the bread from the pan and place it on a rack.
  • 4 let cool to room temperature before slicing.
