Baked Oatmeal Carrot Cake Version

Ingredients

- 2 cups rolled oatmeal (not instant)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup 1% low-fat milk
- 1/2 cup egg beaters egg substitute
- 1/2 cup unsweetened applesauce
- 1/8 cup splenda brown sugar blend
- 1 teaspoon vanilla extract
- 1 tablespoon cinnamon
- 1 -1 1/2 cup carrot, shredded (2 carrots)
- 8 ounces crushed pineapple
- 1/4 cup raisins
- yogurt or milk, for topping
Recipe
- 1 combine wet ingredients.
- 2 add dry ingredients.
- 3 bake in sprayed 8"pan at 350 for 35-45 minutes.
- 4 let cool about 10 minutes to set-up a bit before serving.
- 5 serve with yogurt or milk.
