Baked Oatmeal Carrot Cake Version

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 2 cups rolled oatmeal (not instant)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup 1% low-fat milk
  • 1/2 cup egg beaters egg substitute
  • 1/2 cup unsweetened applesauce
  • 1/8 cup splenda brown sugar blend
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 1 -1 1/2 cup carrot, shredded (2 carrots)
  • 8 ounces crushed pineapple
  • 1/4 cup raisins
  • yogurt or milk, for topping

Recipe

  • 1 combine wet ingredients.
  • 2 add dry ingredients.
  • 3 bake in sprayed 8"pan at 350 for 35-45 minutes.
  • 4 let cool about 10 minutes to set-up a bit before serving.
  • 5 serve with yogurt or milk.
