Creamy Holiday Lemon Cups

Ingredients

  • Servings: 10
  • 2 cups boiling water
  • 8 serving size jello lemon flavor gelatin
  • 1/2 cup cold water
  • 1 1/2 cups cold milk
  • 4 serving size jello vanilla flavor instant pudding
  • 2 teaspoons rum extract
  • 1/2 teaspoon ground nutmeg
  • 2 cups cool whip whipped topping, thawed

Recipe

  • 1 stir boiling water into gelatin in large bowl 2 minutes or until completely dissolved. stir in cold water. cool to room temperature.
  • 2 pour milk into another bowl. add pudding mix. beat with wire whisk 30 seconds. immediately stir into cooled gelatin until smooth. stir in rum extract and nutmeg. refrigerate about 1 1/4 hours or until slightly thickened.
  • 3 stir in whipped topping with wire whisk until smooth and creamy. pour into 10 individual dessert dishes or drinking mugs.
  • 4 refrigerate 4 hours or until firm. garnish with additional whipped topping and sprinkle with additional ground nutmeg just before serving.
