Creole Chicken & Sausage Gumbo

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 2 medium onions, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 jalapeno, diced
  • 1 tablespoon garlic, crushed
  • 1/4 cup butter
  • 4 cups water
  • 1 tablespoon instant beef bouillon (or au jus mix)
  • 1 tablespoon chicken base (or bouillon cube)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 1 (10 ounce) package frozen okra
  • 1 (16 ounce) can tomato paste
  • 2 -3 lbs cooked chicken
  • 1 lb sausage (andouille is best)
  • 1 (10 ounce) package frozen corn
  • hot pepper sauce (like tabasco)

Recipe

  • 1 in a large pot, cook and stir onion, peppers and garlic in butter over low heat until onions are tender (about 5 minutes). add remaining ingredients. heat to boiling, reduce heat. simmer 45 minutes, stirring occasionally ( for more flavor or spice, add more pepper sauce or chili powder). serve over bed of rice with lemon as garnish.
