Flank Steak With Peppers And Soy Sauce

Ingredients

  • Servings: 8
  • 4 cups cooked rice (i use instant rice, or brown)
  • 4 teaspoons canola oil
  • 1 1/4 lbs flank steaks, thinly sliced
  • 4 large assorted bell peppers (any color)
  • 1 large onion, sliced into half moons
  • 4 garlic cloves, sliced
  • 5 tablespoons low sodium soy sauce

Recipe

  • 1 cook rice according to directions, when finished put in a casserole dish.
  • 2 heat 2 teaspoons canola oil in large skillet over medium-high heat.
  • 3 add beef and cook until browned.
  • 4 drain meat and transfer to casserole dish, lying over the rice.
  • 5 heat 2 teaspoons canola oil in same skillet.
  • 6 add peppers, onion and garlic and cook until peppers and onion is soft.
  • 7 transfer to casserole dish, lying over the meat.
  • 8 drizzle with soy sauce, can adjust amount if needed.
  • 9 if necessary, you can put the casserole dish in oven on 200 to keep warm until ready to serve.
  • 10 salt and pepper to taste.
