Cinnamon Oatmeal Breakfast Pudding

Ingredients
- Servings: 4
- 2 cups water
- 1/4 teaspoon salt
- 4 eggs
- 1/4 cup 2% low-fat milk
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 1 1/4 cups quick-cooking oats (not instant)
- 1 1/3 cups 2% low-fat milk
- 1/4 cup dried cranberries (optional) or 1/4 cup raisins (optional)
- 4 teaspoons granulated sugar
Recipe
- 1 bring water and salt to a boil in medium saucepan over high heat. whisk together eggs, 1/4 cup milk, cinnamon and vanilla in medium bowl; stir into boiling water.
- 2 reduce heat to medium-low. stir in oats. simmer until desired consistency, about 5-6 minutes, stirring occasionally.
- 3 spoon into bowls; top each servng with milk cranberries and sugar.
