Beer Rice

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 cup rice, uncooked (not instant)
  • 1/2 cup onion, chopped
  • 1/2 cup red pepper, chopped
  • 1/2 cup butter, melted
  • 16 ounces chicken broth (canned is okay)
  • 3/4 cup beer
  • 1/4 teaspoon thyme

Recipe

  • 1 saute onion and pepper in butter until tender.
  • 2 add chicken broth, rice, beer, thyme and salt and pepper to taste.
  • 3 bring to a boil, cover and reduce heat.
  • 4 simmer for 30- 40 minutes until liquid is absorbed and rice is done.
