Baked Rice Pudding

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 1/2 cup instant rice, cooked & cooled
  • 1/2 cup sugar
  • 3 slightly beaten eggs
  • 2 1/2 cups milk, scalded
  • 1 teaspoon vanilla
  • 1/2 cup raisins
  • 1/4 teaspoon salt
  • cinnamon

Recipe

  • 1 heat oven to 350 degrees.
  • 2 mix above ingredients, pour into a 1-1/2 qt casserole baking dish.
  • 3 place casserole in a pan of very hot water (1inch) deep.
  • 4 bake 1-1/2 hours stirring occasionally.
  • 5 remove from oven but not hot water, sprinkle with cinnamon.
  • 6 cool& refrigerate.
